Activate the Yeast: In a bowl, mix the lukewarm milk with the yeast and sugar. Let it sit for about 10 minutes until it becomes frothy.
Prepare the Dough:
In a large mixing bowl, combine the flour and softened butter. Add the eggs and the activated yeast mixture. Mix until a dough forms.
Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth and elastic.
First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about 1.5 to 2 hours or until it doubles in size.
Shape the Buns: Once risen, divide the dough into equal portions (about 8 buns, 120g each). Shape each portion into a smooth ball and place them on a baking tray lined with parchment paper.
Second Rise: Cover the buns loosely with a cloth and let them rise for another 30-45 minutes until puffy.
Egg Wash & Sesame Seeds: Brush the tops of the buns with a beaten egg and sprinkle with sesame seeds if desired.
Bake: Bake at 60% for 1 minute at 190 °C and then 20% humidity for 14 minutes at 190°C. alternatively, in your home oven for 15-20 minutes at 180°C until golden brown.
Cool & Serve: Allow the buns to cool on a wire rack before slicing and using them for your favourite burgers!
