Caramelised onion tart, an amazing beginning

Ingredients:

  • 1 large white onion
  • 1 roll of buttery puff pastry
  • Lemon thyme
  • Salt
  • Butter
  • 100g Elrick goat cheese
  • 30ml double cream
  • 50ml maple syrup

Instructions:

For the onions
  • Caramelise the Onions. Start by heating the butter in a large pan over medium heat. Once melted, gently add the onion slices, being careful to keep them intact. Cook for about 4–5 minutes per side, allowing them to develop a deep golden colour. The butter will slowly work its magic, drawing out the onion’s natural sweetness. Sprinkle with a pinch of salt and set aside once softened and caramelised.

For the fondue
  • Prepare the Goat Cheese Fondue. In a heatproof bowl, combine the double cream and crumbled goat cheese. Place the bowl over a pot of simmering water (creating a bain-marie) and stir gently as the cheese melts into the cream. Keep stirring until the mixture is completely smooth and silky. For an extra refined texture, strain the fondue through a fine sieve. Keep warm while preparing the tart.

Bake and plate up
  • Assemble the Tart. Preheat your oven to 190°C (375°F). Take a small baking tin (8–10 cm in diameter) and drizzle the bottom with maple syrup. Scatter a few fresh lemon thyme leaves over the syrup, then carefully arrange the caramelised onion slices on top.
  • Roll out the puff pastry and cut a round slightly larger than your baking tin. Place the pastry over the onions, gently pressing down to seal the edges. This step ensures the tart holds its shape once flipped after baking.

  • Bake Until Golden. Place the baking tin in the preheated oven and bake for 8–10 minutes, or until the puff pastry is beautifully golden and crisp. The pastry will puff up slightly as it bakes, creating a deliciously light and flaky crust.
  • Flip, Serve & Enjoy. Once baked, remove the tart from the oven and let it rest for a minute. Carefully invert it onto a serving plate, allowing the glossy maple caramel to coat the onions.

Spoon the warm goat cheese fondue onto the plate, creating a luscious base, and place the tart gently on top. For the final touch, drizzle with a little extra maple syrup for a stunning glossy finish.
